Fig and Wine Fizz Recipe

Ingredients
  

  • 3 ripe fresh figs quartered, plus 1 extra sliced for garnish
  • 1 tablespoon honey
  • 1/2 oz fresh lemon juice
  • 4 oz dry white wine chilled
  • 2 oz soda water or sparkling wine chilled
  • Fresh thyme sprig for garnish
  • Ice

Method
 

  1. Muddle the quartered figs and honey together until broken down into a pulpy mixture.
  2. Stir in the fresh lemon juice.
  3. Fill a glass with ice and add the fig mixture.
  4. Pour in the chilled white wine and stir gently.
  5. Top with soda water or sparkling wine, pouring slowly.
  6. Garnish with a fig half and a thyme sprig. Serve immediately.
