Method
- Muddle the quartered figs and honey together until broken down into a pulpy mixture.
- Stir in the fresh lemon juice.
- Fill a glass with ice and add the fig mixture.
- Pour in the chilled white wine and stir gently.
- Top with soda water or sparkling wine, pouring slowly.
- Garnish with a fig half and a thyme sprig. Serve immediately.
