Method
- Blend the honeydew cubes until smooth.
- Strain the puree through a fine mesh strainer into a pitcher to yield about 1 cup of honeydew juice.
- Stir in the lime juice and agave syrup.
- Add the chilled white wine and stir gently.
- Fill glasses with ice, pour over the wine mixture, and top each with a splash of soda water.
- Garnish with fresh mint and a honeydew ball or two.
