Method
- Blend the cubed watermelon until smooth.
- Strain the puree through a fine mesh strainer into a pitcher, discarding the pulp.
- Stir in the lime juice and agave, if using.
- Pour in the chilled wine and stir gently.
- Top with soda water just before serving.
- Serve over ice, garnished with mint and a watermelon wedge.
